Louisiana's crayfish industry: an economic perspective

Abstract

Louisiana is the largest crayfish producing area in the world, currently having 130,000 acres devoted to crayfish. The Atchafalaya Basin, which is a common property resource, is excluded from the acreage yet accounts for up to 60% of Louisiana's total crayfish production. A great deal is known about the biological aspects of crayfish production; however, economic information associated with the industry is limited. This paper presents an economic perspective of Louisiana's crayfish industry from the producer to the consumer. The economics associated with crayfish production from the Louisiana producer's viewpoint is presented in the first section. The second section covers an overview of the processing sector with the third section devoted to consumer economics.
