Abstract
The selection of samples of crayfish populations is a crucial proble in the elaboration of a management strategy in streams containing crayfish. These results in the South-East of France, the region of Provence-Alpes-Côte d'Azur, show that the assessement of populations is a function of the fishing technique used (hand fishing by night, or trapping), and the structure of the population, i.e. if there is a presence or lack of a fishable stock. We have shown that in populations possessing a fishable stock there exists a dominant hierarchy in the capture with food bait introduced into the stream. The factorial correspondance analysis confirms this phenomenon while demonstrating the selectivity of the mode of fishing according to the structure of the obtained harvest. Special attention is given to the modification undergone by crayfish population by studying it before, and after the fishing season.
