Crayfish farming in France

Abstract
Important in France one century ago, crayfish farming has almost disappeared because of the 'pest' disease. The renewing cultivation has now three principal aims: 1) The study of the local and exotic species behavior. In this case, the rearing is attempted by the national Boards. 2) The crayfish production for the consummation. The crayfish farms are not yet numerous. They are built and managed by private people or companies. The rearing concerns rather Astacus leptodactylus, thereafter Astacus astacus and recently Pacifastacus leniusculus (one farm only). 3) Few new introductions concern a third aim: the destruction of of aquatic invading macrophytes in eutrophic fishponds. With the caution of a serious sanitary control and with the caution of previous ecological studies. The crayfish farming must have probably a real success according to the new requests of the French consumer.
