Abstract

The incidence of microorganisms of public health significance found in South Louisiana crayfish indicated that Coliforms, fecal E. coli, and fecal Streptococci are normally found in samples obtained from natural sources. These same microorganisms are also found in relatively high concentrations in the same water from which these crayfish were obtained. Coagulase Positive Staphylococci, Shigella species, Salmonella species and C. botulinum, type E were generally absent in both crayfish and water samples from natural sources. Recommendations for microbiological guidelines for freshwater crayfish are proposed.
